Recipes from April 25th MOPS Meeting - Yum!

The following are the recipes mentioned at the April 25th MOPS Meeting where the speaker was Kelly Miller from the Health Hut and as appeared in the April 2012 Moptimist.

Salad Dressings for all Tastes
Dressings can be easy.  For instance, you can simply add orange juice, lime juice & balsamic vinegar to greens without even mixing them first; just add what tastes right to you.

You can make a marvelous light summer salad simply by adding strawberries, raspberries, and sliced oranges –with their juice- to a bed of baby lettuce, then topping it all with raspberry wine vinegar to taste.

Oil free  Salad dressing       makes about ½ cup
Juice of 1 lemon, lime or orange   1 tsp. bragg’s amino’s    1 sp. Mustard of choice   1-2 Tbl. (or more) balsamic vinegar or any vinegar of choice   Mint sauce (a few drops) or a teaspoon of molasses or honey (optional)

Orange Juice-Lime Salad Dressing    makes about ½ cup
1/3 cup orange juice   1 tsp. peeled, chopped fresh ginger   Juice and zest of 1 lime   2 Tbls. Raspberry balsamic vinegar

3, 2, 1, Salad Dressing makes about 1/3 cup
3 Tbls. Balsamic vinegar   2 Tbls. mustard of choice   1 Tbls. Maple syrup
Mix all ingredients in a small bowl and whisk until smooth.

My favorite Vinaigrette    makes about 1 ¼ cups
¾ cup extra virgin olive oil pinch of salt   1/3 cup red wine vinegar pinch of cayenne   2 tsp. Dijon mustard   ¼ tsp. toasted sesame oil
Wisk all ingredients till smooth. 


Bacon Buttermilk Ranch  makes about 2 ½ cups
6 slices bacon, cooked till crisp, drained and crumbled.  Store in baggy and add to dressing as needed.   1 cup low fat vegenaise (or mayo, its just not as healthy)
1 cup buttermilk   2 TBLS. Minced scallions (green onions)   1 TBLS. Fresh parsley or ½ TBLS. Dried   1 tsp. minced fresh garlic  (2 cloves)   ½ tsp. ground black pepper   ¼ tsp. sea salt   ¼ tsp. paprika   Dash of Tabasco sauce, or more if you like it (which I do)
Wisk all  ingredients together in a bowl except for bacon.  This dressing stores well.  just add bacon when you use it a little at a time to keep it crisp.  Bacon can also be frozen in a Ziploc to take out and add as needed.

Simple Summer Quinoa Salad

Ingredients:
1 cup quinoa   1 ½ cups cold water   1 medium ripe tomato, chopped   ¼ tsp. salt   3 TBLS.  fresh mint, chopped   ½ red or yellow bell pepper, sliced thin             
¼ cup chopped fresh parsley   1 medium cucumber, peeled and diced   ½ cup chopped broccoli, blanched (optional)   2 scallions (green onions), chopped
½ cup chopped toasted walnuts   (pine nuts, pecans or sliced almonds can be substituted)   ¼ cup feta cheese 

Dressing:
1/4 cup olive oil   1 tsp. Eden toasted sesame oil   3 Tbls. fresh or Santa Cruz organic, not from concentrate lemon juice   ½ tsp. organic Herbamare seasoning blend   2 cloves chopped garlic

Directions:
**soak the quinoa in cold water for 5 minutes or more**rinse thoroughly through a fine mesh strainer till water is clear**bring the 1 ½ cups water to a boil, add salt and quinoa, cover, reduce heat to low.  Cook for about 15 minutes or till light and fluffy and water is absorbed.  Remove from heat, stir to fluff and put in a bowl to cool**blend dressing ingredients with a whisk or shake in a jar**gently combine cooled quinoa, veggies, herbs, nuts and cheese**stir in dressing, cover and chill or serve immediately

A few tips to know about quinoa**unless the box says prewashed, quinoa must be rinsed or it will be terribly bitter, don’t skip this step**quinoa can be cooked ahead and kept in the frig for lots of good uses**it is delicious for breakfast with maple syrup**it can be served hot as a pilaf or used for a stuffing in poultry**for added taste, use vegetable or chicken broth instead of water**quinoa has more protein than any other grain, it is gluten free and cholesterol free and quicker to cook than any other whole grain.  In good health, Enjoy!

Mmmm Monday: Cream of Pumpkin Soup

(served at the October 26, 2011 meeting)


2 cups chopped onion
4 tablespoons butter, melted
4 (14.5 ounce) cans chicken broth
2 (15 ounce) cans pumpkin puree
2 teaspoons salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon ground black pepper
2 cups heavy whipping cream
cinnamon croutons, optional

1. Saute onion in butter in a medium in a medium saucepan until tender. Add 2 cans chicken broth; stir well. Bring to a boil; cover, reduce heat, and simmer 15 minutes.

2. Transfer broth mixture into the container of a blender or processor. Process until smooth.

3. Return mixture to saucepan. Add remaining 2 cans of broth, pumpkin, salt, ground cinnamon. ground ginger, ground black pepper; stir well. Bring to a boil; cover, reduce, heat, and simmer 10 minutes, stirring occasionally.

4. Stir in whipping cream and heat through. Do not boil. Ladle into individual soup bowls.  Serve with cinnamon croutons, optional.

Mmmm Monday: Pumpkin Cookies

2 cups butter
2 cups sugar
1 large can pumpkin
1 tsp vanilla
1 tsp salt
2 tsp baking powder
2 tsp baking soda
2 tsp cinnamon
4 cups flour

Mix dry ingredients and set aside. Cream butter and sugar. Mix in pumpkin and then dry ingredients a little at a time. Drop cookies onto tray by tablespoon or medium Pampered Chef scoop) and bake 350 for 15-20 minutes.

Frosting: Mix 1/2 cup milk, 6 tsp butter, and 1 cup brown sugar, and boil for 3 minutes. Let mix cool then mix in 1 tsp vanilla and 2 cups powdered sugar.  Drizzle onto cookies and let set.

Mmmm Good Monday (rewind): 'NILLA Apple Crisp

(served at Oct 28, 2009 meeting)


What You Need::
4 large Granny Smith apples (about 2lbs), peeled and thinly sliced
1/2 c. packed brown sugar, divided: 1/4 c. and 1/4c.
2 tsp. ground cinnamon, divided: 1 tsp. and 1 tsp.
1/3 c. old-fashioned or quick-cooking oats
1/4 c. cold margarine OR 1/2 stick butter
25 vanilla wafers, crushed (about 1 c.)
1 to 1.5 c. thawed whipped cream

What You Do::
Preheat oven to 350 F.

Mix apples, 1/4 c. brown sugar and 1 tsp. cinnamon. Pour mixture into 8"-9" baking dish.

Combine oats, 1/4 c. brown sugar and 1 tsp. cinnamon into medium bowl. Cut in margarine until mixture resembled coarse crumbs.

Stir in wafer crumbs; sprinkle oat/wafer mixture over apples.

Bake 30-35 minutes or until apples are tender.

Serve with whipped cream.

Mmmm Good Monday: Spinach Mandarin Salad

served at the October 12 meeting

Salad:

2 10-ounce bags fresh spinach
1 can Mandarin Oranges
6 Slices of cooked bacon, crumbled
6 hard-boiled eggs, peeled and chopped

Dressing:
1 cup oil
½ cup sugar
½ cup ketchup
¼ tsp. Worcestershire sauce
1 medium grated onion (or onion powder)

Wash and clean spinach. The morning before our MOPS meeting, put spinach and oranges in a bowl and add bacon. Sprinkle ½ of dressing over all. DO NOT TOSS. Before serving, add eggs and remainder of dressing. Toss lightly and serve.

Mmmm Good Monday: Oriental Salad

served at the September 28 MOPS meeting

1 package coleslaw
1 package broccoli slaw
1 package ramen noodles (chicken flavor), broken into pieces
¼ cup butter
3 tablespoons sesame seeds
¼ cup slivered almonds or cashew nuts

Dressing - mix together:
1 tablespoon soy sauce
½ cup oil
¼ cup vinegar or apple cider vinegar
⅓ cup sugar

Place almonds or cashews, butter and ramen noodles with contents of seasoning packet in a pan.  Saute until nuts are browned.  Right at the end, add sesame seeds.  Watch carefully then turn off heat.  Cool. 

To serve:
Mix the slaws in large bowl.  Right before serving, mix in the cooled nut and noodle mixture, then toss all with the dressing.

Mmmm Good Monday: Cheesy Spinach and Bacon Dip

served at the September 28 MOPS meeting

1 pkg (10oz) frozen chopped spinach, thawed, drained
1 lb (160z) VELVEETA cut into 1/2 inch cubes
4 oz (1/2 of 8-oz pkg) PHILADELPHIA Cream Cheese, cubed
1 can (10 oz) RO'TEL Diced tomatoes & Green Chilies, undrained
8 slices OSCAR MAYER Bacon, cooked, crumbled

Microwave ingredients in microwaveable bowl on HIGH 5 min, or until VELVEETA is completely melted and mixture is well blended, stirring after 3 min.

** When serving this dip at a party, pour the prepared dip into a small slow cooker set on Low. This will keep the dip warm and at the ideal consistency for several hours. For best results, stir the dip occasionally to prevent hot spots.

Kraft Foods - Cheesy Spinach and Bacon Dip

Mmmmm Good Monday: Orzo Salad

served at the September 14 MOPS Meeting

1 lb of Tri-Color orzo pasta
¼ cup extra virgin olive oil, plus 3 Tablespoons
2 cups romaine lettuce or 1 bag prepared
¾ cup crumbled feta cheese
½ cup dried cherries or Craisins®
12 fresh basil leaves, torn
¼ cup pine nuts, toasting optional
3 Tbsp lemon juice
1½ tsp salt
1 tsp black pepper

Bring large pot of salted water and ¼ cup EVOO to a boil. Add the pasta and cook until tender but firm, stirring occasionally, about 8-10 minutes. Drain. Pour pasta on a large cookie sheet. Drizzle with 3 Tablespoons olive oil, toss, spread out, and set aside to cool.

Once orzo is cool, transfer to a large serving bowl. Add the remaining ingredients and toss gently to combine. Serve! (Can be made the night before.)

Mmmm Good Monday: Torte Dessert

served September 14, 2011

Beat 6 egg whites (about 1 cup) in a mixer for several minutes...
Gradually add 1¾ cup sugar...
Add 1 teaspoon vanilla - beat until stiff...
Add 1½ cup broken soda cracker crumbs (1 sleeve Saltines®)

Spread into a well greased 9x13 pan.  Bake at 350° for 15-20 minutes or until light brown.  Cool.

Spread 1 large tub of Cool Whip® over cooled crust.  Top with 1 can pie filling (like blueberry or cherry).  Refrigerate until ready to serve.

Mmmm Good Monday: Mexican Cucumber Salad

served at the May 25, 2011 MOPS Meeting

Ingredients::1 medium cucumber, chopped
1 (8.75 ounce) can whole kernel corn, drained
1 (16 ounce) can stewed tomatoes, drained and sliced
1 green bell pepper, chopped 
1 red bell pepper, chopped
2 tablespoons red wine vinegar
1 tablespoon crushed red pepper flakes
1/2 teaspoon garlic, minced
1/2 teaspoon cumin
1/4 teaspoon dried cilantro
1/4 teaspoon salt
1/8 teaspoon ground black pepper


Directions::

In a large bowl, toss together the cucumber, corn, tomatoes, green bell pepper, red bell pepper, and red wine vinegar. Season with crushed red pepper flakes, garlic, cumin, cilantro, salt, and black pepper. Cover, and chill at least 30 minutes before serving.

Mmmm Good Monday: Pull-Apart Bacon Bread

(this was served at the February 23 MOPS Meeting)

Pull-Apart Bacon Bread Recipe

Ingredients

12 slices bacon, diced
1 (1 pound) loaf frozen bread dough, thawed
2 tablespoons olive oil, divided
1 cup shredded part-skim mozzarella cheese
1 (1 ounce) package ranch salad dressing mix

Directions
In a skillet, cook bacon over medium heat for 5 minutes or until partially cooked; drain on paper towels. Roll out dough to 1/2-in. thickness; brush with 1 tablespoon of oil. Cut into 1-in. pieces; place in a large bowl. Add the bacon, cheese, dressing mix and remaining oil; toss to coat.

Arrange pieces in a 9-in. x 5-in. oval on a greased baking sheet, layering as needed. Cover and let rise in a warm place for 30 minutes or until doubled.

Bake at 350 degrees F for 15 minutes. Cover with foil; bake 5-10 minutes longer or until golden brown.

Mmmm Good Monday: Broccoli Ham Ring

(served at November 8th meeting)

1/4 pound ham
1/4 pound fresh broccoli
1 small onion
1/2 cup fresh parsley
6 ounces Swiss cheese
2 tablespoons Dijon mustard
1 teaspoon lemon juice
2 packages (8-oz. each) refrigerated crescent rolls

Preheat oven to 350-degrees. Coarsely chop ham, broccoli and onion. Finely snip parsley. Coarsely grate cheese. Mix all ingredients except crescent rolls and set aside. Arrange triangles in a circle on a 13-inch baking sheet or stone, with bases overlapping in center and points to the outside. There should be a 3-inch diameter circle in center. Evenly spoon filling over base. Fold points of triangles over filling and tuck under base at center. Filling will not be completely covered. Bake 25-30 minutes or until golden brown.

Mmmm Good Monday: Candy Bar Apple Salad

Served at MOPS on May 12, 2010.... delicious!

1 1/2 cups cold milk
1 pkg (3.4oz) instant vanilla pudding
1 8oz. carton cool-whip
4 large apples, chopped
4 snickers, chopped

In large bowl, whisk milk and pudding mix for 2 minutes. Let stand 2 minutes or until soft-set. Fold in cool-ship. Fold in apples and candy bars. Refrigerate until ready to serve.

Mmmm Good Monday: Ham and Egg Casserole

(served at January 27th Meeting)

2 dozen eggs, beaten
chives

1 can drained stewed tomatoes
2 pounds ham, cubed
1 stick butter, melted
cheddar cheese, chopped in cubes
8 ounces sour cream
2 (4oz.) cans sliced mushrooms, drained (optional)

Mix all ingredients together in a large bowl. Pour into two 13x19 inch casseroles sprayed with Pam. Bake at 350-degrees for about 45 minutes. Recipe can easily be halved or partially bake once casserole and freeze.

Mmmm Good Monday: Beans 'N Weiner Biscuit Casserole

(served at the January 13th meeting)

1 lb. wieners, sliced
1 can pork and beans
1/2 cup chopped onion
1/2 cup ketchup
3 tablespoons brown sugar
1 (7.5 oz) can Pillsbury refrigerated Buttermilk biscuits
1 cup shredded cheddar cheese

Combine wieners, pork and beans, onion, ketchup and brown sugar in a saucepan. Bring to a boil. Reduce heat and simmer 5 minutes. Spoon hot bean mixture into 8 inch square baking dish. Separate dough into 10 biscuits. Arrange biscuits on top of bean mixture, around the edge. Sprinkle biscuits with cheese. Bake at 400 degrees for 10-15 minutes or until biscuits are golden brown.

Feeding Your Child : Healthy Alternatives to Junk Food

Here are some healthy variations of sweet treats kids love (and they probably won't notice the difference):

Grilled Banana S'Mores
Cut banana into slices. Place bananas on graham crackers. Top with a square of dark chocolate. Grill 2 minutes (on a sheet of aluminum foil) until chocolate softens. Top with another graham cracker square. Serve.

Feeding Your Baby : Great First Foods

It's easy to get caught in a rut when your baby starts eating solids. Here are some creative ideas on how to add some variety to your baby's repertoire:
  • applesauce with ground cinnamon
  • avocado with minced cilantro
  • bananas and pears with fresh minced ginger
  • pureed pumpkin with ground cinnamon

Or try making this breakfast parfait ...

  • Layer rice cereal between mango and blueberry purees - VOILA (and yum)!

More Simple & Frugal Beauty Treatments


Sour Cream Exfoliating Facial Mask
Smooth 1-2 tablespoons of cool, full-fat sour cream in a thin layer over clean face and neck (avoiding eyes and lips). Wait 7-10 minutes, then remove with wet washcloth. Splash face with warm water and dry

Lactic acid in sour cream helps speed cell turnover and brighten dull complexions. The fat in the cream is a great restorative moisturizer.

Chamomile Tea Compress
Steep chamomile tea until golden yellow. Soak a clean washcloth in the tea and then apply to the skin as a compress. Rest compress on skin 10 minutes before rinsing and drying.

Chamomile is a natural anti-inflammatory agent, which can reduce redness and puffiness around the eyes. It can also sooth irritated skin.

Almond Oil Hand Moisturizer
Rub 1 teaspoon of almond oil into hands and cuticles. Wrap each hand with a small towel and let oil soak into skin for at least 5 minutes. Wipe excess off hands, but don't rinse. Remaining oil will be absorbed within 5 minutes. Follow with a rich hand cream.

The vitamin E present in almond oil moisturizes dry skin and protects nails and cuticles from damage.

Pineapple Foot Rub
Puree 1 cup fresh pineapple in food processor until smooth. With feet in wash basin, massage puree into foot. After 7-10 minutes rinse feet with warm water and dry.

An enzyme in pineapple helps break down dead skin cells and soften skin.

Kiwi Facial Scrub
Mash a ripe peeled and sliced kiwi fruit with a fork, forming a paste. Apply paste to clean, damp skin (avoid eye and lip areas). Scrub 30-60 seconds. Rinse with warm water and pat dry.

The vitamin C in kiwi helps even out skin texture and fight skin damage. The seeds within the kiwi help exfoliate skin.

Olive Oil Hair Conditioner
Before showering, comb several tablespoons of light olive oil through hair, working from root to ends. Cover hair with shower cap. After 5-7 minutes of showering remove cap and shampoo. Rinse as usual. Follow up with regular conditioner.

Vitamin E and fatty acids present in oil act as a great moisturizer for brittle hair or hair that is overstyled.

Organic Green Goddess Facial Mask
1 cup yogurt
1 Tbsp. mayonnaise
1 Tbsp. honey
1/2 ripe avocado
1 tsp. lemon juice
pinch of ground coriander
.
Blend first 4 ingredients in food processor. Mix in (by hand) lemon juice and coriander until well combined. Apply to face and neck. Leave 15 minutes, then wash off with warm water. Follow up with moisturizer.

Indiana Corn Casserole
What You Need
  • 1 lb bacon
  • 1/2 cup butter
  • 1/2 medium onion, chopped
  • 1/2 cup chopped celery
  • 1 red pepper, chopped
  • 1 green pepper, chopped
  • 5 Tbsp. all-purpose flour
  • 2 cups sour cream
  • 2 lbs fresh corn or frozen corn, thawed
  • 1 Tbsp. chopped parsley

What You Do

  1. Preheat over to 350 F. Cook bacon, then chop into bite-sized pieces. Set aside.
  2. Melt butter in large pot over medium heat. Saute' onion, celery and peppers until soft. Stir in flour, then sour cream until well-combined. Add corn and most of bacon, seasoning with salt and pepper.
  3. Pour mixture into 9x13 baking dish and sprinkle remaining bacon over top along with parsley. Bake 30-45 minutes until lightly browned.

Serves 6-8
