Beat 6 egg whites (about 1 cup) in a mixer for several minutes...
Gradually add 1¾ cup sugar...
Add 1 teaspoon vanilla - beat until stiff...
Add 1½ cup broken soda cracker crumbs (1 sleeve Saltines®)
Spread into a well greased 9x13 pan. Bake at 350° for 15-20 minutes or until light brown. Cool.
Spread 1 large tub of Cool Whip® over cooled crust. Top with 1 can pie filling (like blueberry or cherry). Refrigerate until ready to serve.
