2 dozen eggs, beaten
chives
1 can drained stewed tomatoes
2 pounds ham, cubed
1 stick butter, melted
cheddar cheese, chopped in cubes
8 ounces sour cream
2 (4oz.) cans sliced mushrooms, drained (optional)
Mix all ingredients together in a large bowl. Pour into two 13x19 inch casseroles sprayed with Pam. Bake at 350-degrees for about 45 minutes. Recipe can easily be halved or partially bake once casserole and freeze.
